Mexican cuisine is a style of cuisine that originated in Mexico,... obviously :)
Mexican food has a great deal of Spanish influence. This is visible by its varied flavors and variety of spices used.
Mexican cuisine is milder than Tex-Mex cuisine, which uses hotter peppers for spiciness.

Mexican food varies a lot by region, due to the local climate and geography and ethnic differences among the indigenous inhabitants. These different ethnic groups were influenced by the Spanish conquistadores in varying degrees.

North of Mexico:
Known for its beef, goat and meat dishes, in particular the well-known Arrachera cut.

Central Mexico:
Its cuisine is largely made up of a misture of influences from the rest of the country, but also has its authentic dishes, such as menudo, barbacoa, pozole, and also carnitas.

Southeastern Mexico:
Known for its spicy vegetable and chicken-based dishes. Due to its geographical location, the cuisine has quite a bit of Caribbean influence. Seafood (fish, shellfish, etc.) is commonly prepared in the states that border the Gulf of Mexico and Pacific Ocean.
